Here's a simple and delicious Paneer Sabji (Indian cottage cheese curry) recipe that you can prepare quickly at home. This version is a semi-dry North Indian-style sabji that goes well with roti, naan, or rice.

๐ง Paneer Sabji Recipe
๐ Ingredients:
Paneer – 200g (cubed)
Onion – 2 medium (finely chopped)
Tomato – 2 medium (pureed or finely chopped)
Green chili – 1 (optional, chopped)
Ginger-garlic paste – 1 tsp
Cumin seeds – 1/2 tsp
Turmeric powder – 1/4 tsp
Red chili powder – 1/2 tsp (adjust to taste)
Coriander powder – 1 tsp
Garam masala – 1/2 tsp
Kasuri methi (dried fenugreek leaves) – 1/2 tsp (optional, but adds flavor)
Salt – to taste
Oil or ghee – 2 tbsp
Fresh coriander – for garnish
๐ณ Instructions:
1. Heat oil/ghee in a pan. Add cumin seeds and let them splutter.
2. Add chopped onions and sautรฉ until golden brown.
3. Add ginger-garlic paste and green chili. Sautรฉ for 30 seconds.

4. Add tomato puree and cook until oil starts to separate.
5. Add turmeric, red chili powder, coriander powder, and salt. Mix well.
6. Add paneer cubes and gently mix to coat with the masala.
7. Cook for 3-4 minutes on low flame. (Optional: Add 2 tbsp water if you want a bit of gravy.)
8. Add garam masala and crushed kasuri methi.
9. Cook for 1 more minute and turn off the heat.
10. Garnish with chopped coriander leaves.
