Aalu Paratha (Potato-Stuffed Flatbread) recipe
Here’s a classic Aalu Paratha (Potato-Stuffed Flatbread) recipe — a popular North Indian breakfast dish that's crispy on the outside and stuffed with spiced mashed potatoes inside.

For the Dough:
2 cups whole wheat flour
Water (as needed)
1 tsp oil or ghee (optional)
½ tsp salt (optional)
For the Stuffing:
3–4 medium-sized potatoes (boiled and mashed)
1–2 green chilies (finely chopped)
1 tsp grated ginger
1 tsp cumin seeds (optional)
½ tsp red chili powder
½ tsp garam masala
½ tsp dry mango powder (amchur) or a few drops of lemon juice
2 tbsp chopped fresh coriander (cilantro)
Salt to taste
For Cooking:
Ghee or oil, as needed

Step 1: Prepare the Dough
1. In a large bowl, mix wheat flour and salt (if using).
2. Add water little by little and knead into a smooth, soft dough.
3. Cover with a damp cloth and let it rest for 20–30 minutes.
Step 2: Make the Filling
1. Peel and mash the boiled potatoes.
2. Add green chilies, ginger, spices, coriander, and salt. Mix well.
3. Taste and adjust seasoning if needed.
Step 3: Assemble the Parathas
1. Divide dough into lemon-sized balls. Do the same with the filling.
2. Roll a dough ball into a small circle (about 4–5 inches wide).
3. Place the potato filling in the center.
4. Bring the edges together to seal and pinch off the excess dough at the top.
5. Flatten gently and roll again (6–7 inches wide), dusting with flour to avoid sticking.
Step 4: Cook the Parathas
1. Heat a tawa or flat pan on medium heat.
2. Place the rolled paratha on it.
3. When bubbles start to appear, flip it.
4. Spread a little ghee/oil and cook until golden brown spots appear on both sides.
5. Repeat for all parathas.

Serve hot with curd, pickle, and a dollop of butter.
