Here's a simple and delicious vegetable pulao recipe that you can easily make at home:

๐ง Ingredients:
Basmati rice – 1 cup (soaked 20 mins & drained)
Mixed vegetables (carrot, peas, beans, potato, etc.) – 1 to 1½ cups (chopped)
Onion – 1 large (thinly sliced)
Green chili – 1 (slit)
Ginger-garlic paste – 1 tsp
Whole spices:
Bay leaf – 1
Cinnamon stick – 1 inch
Cloves – 3
Green cardamom – 2
Cumin seeds – 1 tsp
Salt – to taste
Oil or ghee – 2 tbsp
Water – 2 cups (or as needed)
Coriander leaves – for garnish
(Optional) Mint leaves – a few for flavor

1. Preparation:
Wash and soak basmati rice for 20 minutes. Drain and set aside.
Chop all vegetables.
2. Sautรฉ Spices:
Heat oil or ghee in a pot or pressure cooker.
Add cumin seeds and whole spices. Let them sizzle for a few seconds.
3. Add Aromatics:
Add sliced onions and green chili. Sautรฉ until golden brown.
Add ginger-garlic paste. Sautรฉ until the raw smell disappears.
4. Add Vegetables:
Add chopped vegetables and sautรฉ for 2–3 minutes.
(Optional) Add a few mint leaves here for extra aroma.
5. Add Rice:
Add soaked & drained rice. Gently stir for 1–2 minutes to coat the rice with oil and spices.
6. Add Water & Cook:
Add 2 cups water and salt to taste.
Bring to a boil. Then cover and cook:
In a pot: Cover and simmer for 15 minutes on low heat until rice is done.
In a pressure cooker: Cook for 1 whistle on medium heat. Let the pressure release naturally.
7. Garnish & Serve:
Fluff the pulao with a fork. Garnish with coriander leaves.
Serve hot with raita, pickle, or salad.
