Here’s a simple and delicious Veg Roll Recipe you can make at home. It’s perfect as a snack, lunch, or even a light dinner.

๐ง Ingredients:
For the stuffing:
1 tbsp oil
1/2 tsp cumin seeds
1 onion, thinly sliced
1 capsicum (green bell pepper), julienned
1 carrot, julienned
1/2 cup cabbage, shredded
1 boiled potato, mashed (optional for binding)
1/4 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp garam masala
Salt to taste
Chaat masala (optional, for tang)
Coriander leaves, chopped
For the roll:
4 whole wheat or all-purpose flour rotis/parathas
2 tbsp butter or ghee (for toasting)
Green chutney or mayonnaise (optional)
Onion rings, for garnish
Lemon juice
๐ฉ๐ณ Instructions:
1. Prepare the Filling:
1. Heat oil in a pan and add cumin seeds.
2. Add onions and sautรฉ till translucent.
3. Add capsicum, carrot, cabbage and cook on high flame for 2-3 minutes (don’t overcook; keep them slightly crunchy).
4. Add mashed potato (if using), turmeric, red chili powder, garam masala, and salt.
5. Mix well and cook for another 2 minutes.
6. Turn off heat, add chopped coriander, and sprinkle some chaat masala and lemon juice.
2. Prepare the Roll Base:
1. Cook rotis or parathas and keep them warm.
2. Apply a thin layer of green chutney or mayo on the base (optional).
3. Assemble the Roll:
1. Place 2-3 tablespoons of the stuffing in the center of the roti.
2. Top with onion rings and a squeeze of lemon juice.
3. Roll tightly and toast it lightly on a pan with butter/ghee for crispiness.
