Besan ka Chilla recipe veggies
Besan ka Chilla (also called Besan Cheela) is a delicious and quick Indian savory pancake made with gram flour (besan), spices, and veggies. Here's a simple recipe:
๐ฟ Ingredients (Serves 2–3)
1 cup besan (gram flour)
1/2 cup water (adjust for consistency)
1 small onion, finely chopped
1 green chili, finely chopped (optional)
1/4 cup coriander leaves, chopped
1/4 tsp turmeric powder
1/4 tsp red chili powder
1/2 tsp cumin seeds (jeera)
Salt to taste
Oil or ghee for cooking
๐ธ Optional add-ins: grated carrots, spinach, capsicum, tomatoes, ajwain (carom seeds), ginger paste
๐ช Instructions
1. Prepare the batter
In a mixing bowl, add besan, turmeric, red chili powder, cumin seeds, and salt. Slowly add water while whisking to avoid lumps. The batter should be smooth and slightly thick like pancake batter.
2. Add vegetables
Mix in onion, green chili, and coriander leaves (plus any optional veggies you like).
3. Rest the batter (optional)
Let it rest for 10–15 minutes to enhance flavors.
4. Cook the chilla
Heat a nonstick tawa or pan over medium heat.
Drizzle a few drops of oil and wipe it lightly with a paper towel.
Pour a ladleful of batter and spread it gently in a circular motion.
Cook on medium heat until golden brown on the bottom, then flip.
Cook the other side until golden and crispy.
Add a little more oil if needed.
5. Serve hot
Serve with green chutney, tomato ketchup, or curd (yogurt).
๐ Tips
For a crispier chilla, keep the batter slightly thinner.
Stir the batter each time before making a new chilla as besan tends to settle.
Can be packed in tiffin or enjoyed as a healthy breakfast/snack.
