๐ธ Part 1: Ingredients
๐ซ For Litti:
Wheat flour – 2 cups
Ajwain (carom seeds) – ½ tsp
Salt – ½ tsp
Ghee – 2 tbsp (for dough) + more for dipping
Water – as needed (for kneading)
๐ง For Sattu Filling:
Sattu (roasted gram flour) – 1 cup
Mustard oil – 2 tbsp
Green chili – 1-2 (finely chopped)
Ginger – 1 tsp (grated)
Garlic – 3-4 cloves (crushed)
Lemon juice – 1 tbsp OR dry mango powder – 1 tsp
Coriander leaves – 2 tbsp (chopped)
Pickle masala – 1 tsp (optional, for flavor)
Salt – to taste
Water – just enough to moisten
๐ For Chokha (Mashed Veg Mix):
Brinjal (eggplant) – 1 large (roasted)
Tomatoes – 2 medium (roasted)
Boiled potatoes – 2 medium
Green chili – 1-2 (chopped)
Garlic – 4-5 cloves (crushed)
Mustard oil – 1 tbsp
Salt – to taste
Coriander leaves – 2 tbsp (chopped)
๐ธ Part 2: Instructions
๐ซ Preparing Litti:
1. Mix flour, ajwain, salt, and ghee. Add water and knead into a firm dough. Cover and rest 20–30 mins.
2. For the sattu filling, mix all ingredients well. It should be moist enough to bind.
3. Divide dough into balls. Flatten each, place a spoonful of filling inside, seal edges, and shape into balls.
4. Bake in a traditional tandoor, oven (200°C for 25–30 min), air fryer, or cook on open flame or pan, turning regularly until browned and crisp.
5. Dip hot littis in desi ghee before serving.
๐ Preparing Chokha:
1. Roast brinjal and tomatoes on open flame or in oven until soft. Peel skin.
2. Mash roasted brinjal, tomatoes, and boiled potatoes together.
3. Add chopped chili, crushed garlic, mustard oil, salt, and coriander. Mix well.
๐ฝ️ Serving Suggestion:
Serve hot litti dipped in ghee with chokha on the side. Optionally, serve with green chutney and curd for a full traditional platter.
