Here’s a classic Pav Bhaji recipe, a popular Indian street food made with a spicy vegetable mash (bhaji) served with buttered bread rolls (pav):

For the Bhaji:
Potatoes – 3 medium, boiled & mashed
Cauliflower – 1 cup, finely chopped
Green peas – ½ cup (fresh or frozen)
Carrot – 1, finely chopped
Capsicum (bell pepper) – 1, finely chopped
Onion – 2 medium, finely chopped
Tomatoes – 3 medium, finely chopped or pureed
Ginger-garlic paste – 1½ tsp
Green chili – 1, finely chopped (optional)
Pav Bhaji masala – 2 to 3 tsp
Red chili powder – 1 tsp (adjust to taste)
Turmeric powder – ½ tsp
Salt – to taste
Butter – 2 to 4 tbsp (or more, as preferred)
Water – as needed
Fresh coriander leaves – chopped, for garnish
Lemon wedges – to serve
For the Pav:
Pav buns – 8
Butter – for toasting
Pav bhaji masala – a pinch (optional, for extra flavor)
๐ณ Instructions
1. Prepare the Vegetables:
Boil potatoes, peas, cauliflower, and carrots until soft (use pressure cooker or boil in water). Drain and mash roughly.
2. Make the Bhaji:
1. Heat butter in a large pan or tawa.
2. Add chopped onions and sautรฉ until golden brown.
3. Add ginger-garlic paste and green chili. Sautรฉ for a minute.
4. Add chopped capsicum. Cook for 2–3 minutes.
5. Add chopped tomatoes. Cook until soft and mushy.
6. Add turmeric, chili powder, pav bhaji masala, and salt. Mix well.
7. Add the mashed vegetables. Mix and mash everything together using a potato masher.
8. Add water as needed to adjust consistency. Let it simmer on low flame for 10–15 minutes, stirring and mashing occasionally.
9. Add more butter for richness if desired.
10. Garnish with chopped coriander and a dollop of butter.
3. Toast the Pav:
1. Slice the pav buns horizontally (but not completely).
2. Heat butter on a tawa, sprinkle pav bhaji masala (optional), and toast the pav until golden on both sides.
