Seviyan Kheer or Vermicelli Kheer
Shviyan Kheer (also called Seviyan Kheer or Vermicelli Kheer) is a delicious and quick Indian dessert made with roasted vermicelli, milk, and sugar, often flavored with cardamom and garnished with dry fruits. Here's a classic and easy recipe:

๐ง Ingredients:
1 cup vermicelli (seviyan/shviyan) – preferably roasted
4 cups full-fat milk
1/3 cup sugar (adjust to taste)
2 tbsp ghee (clarified butter)
1/4 tsp cardamom powder (elaichi)
10-12 cashews
10-12 almonds (sliced)
10-15 raisins
A few saffron strands (optional)
2 tbsp chopped pistachios (optional)
๐ฉ๐ณ Instructions:
1. Roast the Vermicelli (if not already roasted):
Heat 1 tbsp ghee in a heavy-bottomed pan.
Add vermicelli and roast on low-medium heat until golden brown.
Remove and keep aside.
2. Fry the Dry Fruits:
In the same pan, add remaining 1 tbsp ghee.
Fry cashews, almonds, and raisins until golden. Set aside.
3. Boil the Milk:
In a deep saucepan, bring milk to a boil.
Lower the heat and let it simmer for 5–7 minutes, stirring occasionally.
4. Cook the Vermicelli:
Add roasted vermicelli to the simmering milk.
Cook on medium heat until soft (around 8–10 minutes), stirring to avoid sticking.
5. Sweeten and Flavor:
Add sugar and stir until it dissolves.
Mix in cardamom powder and saffron strands (if using).
Let it simmer for another 3–4 minutes until slightly thickened.
6. Garnish and Serve:
Add the fried dry fruits and chopped pistachios.
Serve hot or chilled as per preference.

Adjust thickness by adding more milk if needed.
For a richer taste, replace part of the milk with condensed milk (reduce sugar accordingly).
Chilling the kheer thickens it further, so loosen with a little w
arm milk before serving if needed.
