๐ Ingredients:
Cooked rice – 2 cups (preferably cold or day-old rice)
Soya chunks – 1 cup
Onion – 1 medium, sliced
Garlic – 4-5 cloves, finely chopped
Ginger – 1 tsp, grated
Green chilies – 1-2, slit (optional)
Carrot – 1 small, finely chopped
Capsicum (bell pepper) – ½ cup, chopped
Spring onions – ¼ cup, chopped (optional)
Soy sauce – 1½ tbsp
Chili sauce – 1 tsp (optional)
Vinegar – 1 tsp
Salt – to taste
Pepper powder – ½ tsp
Oil – 2 tbsp
Water – for boiling soya chunks
Instructions:
1. Prepare Soya Chunks:
Boil water with a pinch of salt.
Add soya chunks and cook for 5-7 minutes until soft.
Drain and rinse with cold water. Squeeze out excess water and cut them into halves if large.
2. Stir-Fry Base:
Heat oil in a wok or pan.
Add chopped garlic, ginger, and green chilies. Sautรฉ for 30 seconds.
Add sliced onions and sautรฉ until translucent.
3. Add Veggies:
Toss in carrots, capsicum, and other desired vegetables.
Stir-fry on high heat for 2–3 minutes (keep veggies slightly crunchy).
4. Add Soya Chunks:
Add the prepared soya chunks to the pan.
Stir-fry for another 2 minutes.
5. Flavoring:
Add soy sauce, chili sauce, vinegar, salt, and pepper.
Mix well to coat everything evenly.
6. Add Rice:
Add cooked rice and gently mix everything together.
Stir-fry for 2–3 minutes until heated through and evenly coated.
7. Garnish and Serve:
Garnish with chopped spring onions.
Serve hot with chili garlic sauce or eat as
