Here's a simple and authentic Usal Pav recipe – a popular Maharashtrian street food made with sprouted beans, spices, and served with soft pav (bread rolls).

🥣 Ingredients
For the Usal:
2 cups mixed sprouted beans (matki, moong, chana, etc.)
1 large onion – finely chopped
1 large tomato – finely chopped
1–2 green chilies – chopped
1 tsp ginger-garlic paste
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1 tsp red chili powder
1.5 tsp Goda masala (or garam masala if unavailable)
Salt – to taste
2 tbsp oil
Water – as needed
Fresh coriander leaves – chopped (for garnish)
Optional: 1 tsp jaggery
For Serving:
Pav (Indian bread rolls)
Chopped onions
Fresh lemon wedges
Butter for toasting pav
👩🍳 Instructions
1. Cook the Sprouts
Pressure cook or boil the sprouted beans with a little salt and turmeric for 1–2 whistles (until just cooked but not mushy).
2. Prepare the Masala
Heat oil in a pan. Add mustard seeds. Once they splutter, add cumin seeds.
Add onions and sauté until golden.
Add green chilies and ginger-garlic paste. Sauté until raw smell disappears.
Add chopped tomatoes and cook until soft and oil separates.
3. Add Spices & Beans
Add turmeric, chili powder, goda masala, and salt. Mix well.
Add the cooked sprouts and mix gently.
Add water as needed for a semi-thick gravy.
Simmer for 10–15 minutes on low flame.
Optional: Add jaggery to balance flavors.
4. Toast Pav
Heat a tawa (griddle), add butter, and toast the pav buns until golden on both sides.
5. Garnish and Serve
Garnish the usal with fresh coriander.
Serve hot usal in bowls with chopped onions and lemon wedges on the side.
Serve with butter-toasted pav.
Tips
Use matki/moth beans as the main sprout for traditional flavor.
Adjust spice levels to taste.
You can top the usal with farsan or sev for
added crunch.
