Healthy & Delicious Upma Recipes hotel style


Upma is one of the most loved and comforting South Indian breakfast dishes. Made with roasted semolina (sooji/rava), fresh vegetables, and a touch of spices, this dish is light, healthy, and wholesome. It not only fills your stomach but also keeps you energized throughout the day. The best part about upma is its simplicity and quick preparation, making it perfect for busy mornings.





Ingredients


1 cup rava/sooji (semolina)


2 tablespoons ghee or oil


1 teaspoon mustard seeds


1 teaspoon urad dal (split black gram)


1 teaspoon chana dal (split Bengal gram)


1–2 green chilies (finely chopped)


1 medium onion (finely chopped)


1 teaspoon grated ginger


8–10 curry leaves


1 medium carrot (chopped)


¼ cup green peas


4–5 beans (chopped)


3 cups water


Salt to taste


Fresh coriander leaves (chopped, for garnish)


Lemon juice (optional, for tangy flavor)




Method


Step 1: Roast the Rava


Dry roast the rava in a pan on low flame until it turns slightly golden and aromatic. Keep it aside to cool.


Step 2: Prepare the Tempering


Heat ghee or oil in a pan. Add mustard seeds and let them splutter. Add urad dal, chana dal, curry leaves, green chilies, and ginger. Sauté until the dals turn golden brown.


Step 3: Add Vegetables


Add chopped onion and sauté until translucent. Then add carrots, beans, and peas. Cook for 3–4 minutes until the vegetables become slightly tender.


Step 4: Cook the Upma


Add 3 cups of water and salt. Bring it to a boil. Gradually add the roasted rava while stirring continuously to avoid lumps. Cook on low flame until the mixture thickens and turns soft.


Step 5: Garnish and Serve


Turn off the heat. Garnish with fresh coriander and a few drops of lemon juice. Serve hot with coconut chutney, pickle, or simply enjoy it plain.



Tips & Variations


You can add cashews for extra crunch and richness.


For a healthier version, use broken wheat (daliya) instead of rava.


Add more vegetables like capsicum, tomato, or corn for extra nutrition.


Serve with sambhar for a complete South Indian breakfast experience.
